Peanut Banana Cookies

Gluten-Free Peanut Butter Banana Cookies!

Ingredients:

  • 2 cups ripe bananas, smashed
  • 1 cup brown sugar, firmly packed
  • 5 tablespoons almond milk
  • 1 cup peanut butter
  • 2 cup gluten-free flour
  • 2 teaspoon baking soda

Preparation:

  •  Add ripe bananas and milk to a food processor and pulse until smooth. Next add the peanut butter and brown sugar and repeat the process.
  • Add the flour and baking soda last and pulse to achieve a smooth cookie dough.
  • Drop from a teaspoon onto a cookie sheet, lined with tin foil. Bake at 350 degrees for 15 minutes.

Great recipe! Something I could easily use for myself as well as friends. However, I would like to take this opportunity to add an allergen to your list (a common one, at that) that might be of interest - soy. It is possible that this ingredient (in the form of soybean oil) may be present in the peanut butter used and would definitely be present in the non-stick spray as a binding agent between the oil and propellant - which is easy to adapt. By remote chance the gluten free flour may contain soy flour or lecithin, but this is unlikely in general. I have a couple of soy-allergics friends and am coeliac myself.

Great recipe, will certainly have to try it for myself. I am rating this up!
